As many of you have heard the old saying, “if life gives you lemons, make lemonade”. Well, finding out you have ALS is one big sour lemon! I have always been a “zippity-do-da” kind of guy, but ALS has been hard to overcome. News that most people’s life expectancy is 3 to 5 years makes you rethink all your priorities and puts everything in proper perspective. I have found the strength to fight this awful disease in God, family and friends. You never really know how many friends you have or how much you are truly loved until you receive news like ALS. I found out that I am a rich and very blessed man. So many of you, family and friends, have donated time, prayers, notes of encouragement and treasure that I have been rendered speechless. You can just see that from the number and variety of recipes here. To just say “Thank you”, in my mind for all that you have done is not nearly enough. Therefore, this recipe book is dedicated to all of you who have kept my family and me in your prayers, given your time or treasure or encouraged me to fight on. You are the ones who help me make lemonade every day. We thank you all from the bottom of our hearts!

Anne's Hot Cheddar-Mushroom Spread

Ingredients:
2 cups mayonnaise 2 cups shredded cheddar cheese 2/3 c. grated Parmesan cheese 4 cans (4.5oz each) sliced mushrooms, drained 1 envelope Ranch salad dressing mix Directions:
In a large bowl, combine mayo, cheeses, mushrooms and ranch mix. Spread into a greased 9" pie plate. Bake, uncovered, at 350º for 20-25 minutes or until cheese is melted and bubbly.
