Ingredients:
6 Peeled and chopped potatoes ˝ Cup of finely chopped white onions ˝ Cup of finely chopped red and green peppers 1 Tablespoon of minced garlic 1 Can of Rotel diced tomatoes (Medium) 2 Tablespoons of Virgin olive oil 2 Cups of Water ˝ Shredded sharp cheese (Optional) Directions:
Heat a skillet over Medium to High. Add Virgin Oil and let that heat for 2 to 3 minutes. Add onions, peppers, and minced garlic. Sauté for about 10 minutes. Add potatoes & allow to brown. Once potatoes are slightly browned, add Rotel and 2 cups of water. Let simmer for about 15 minutes covered with a lid. Add Cheese (optional). Plate n' serve and, now, you're ready to enjoy The Best Soul Breakfast Potatoes!
