This book is part of my senior project and very important to me and my family. I have an older brother with special needs and the organization that will benefit from the sales of this cookbook means a lot to our family. My brother was often made fun of and treated poorly when he as in school. That continues to this day as people who don't understand him don't always behave kindly.

Specialized Needs Recreation is an organization that provides social and recreational opportunities children and adults with disabilities. The programs they offer are amazing. The adult programs include a daily program that includes time in the kitchen, giving back to the community and lots of fun. There are school break camps for the younger kids that are so important because kids with special needs often struggle and cannot attend other summer camps.

Hot Cakes Baby

Ingredients:
1 ½ cups buttermilk
1 cup milk
1 tsp baking soda
2 eggs
1 tbsp whole-wheat flour
1 tbsp cornmeal
½ tsp salt
2 tbsp Crisco shortening, melted
2 cups sifted flour
2 tsp baking powder
Directions:
1. Mix milk and buttermilk in a large bowl
2. Stir in baking soda
3. Divide egg yolks from egg whites into two separate bowls
4. Stir egg yolks into milk mixture
5. Add whole-wheat flour
6. Add cornmeal
7. Add salt
8. Sift in 2 cups of flour, stir mixture after each cup
9. Stir in melted Crisco
10. Stir in baking powder
11. Mix all of the above with a whisk or electric mixer until well mixed.
12. Beat egg whites with egg beater until fluffy, and fold into batter.
13. Grill over medium/high heat and enjoy with butter and syrup
