Apple Matzo Kugel Recipe

5 large Granny Smith apples cored and diced, or shredded.

1/2 c light brown sugar
1/4 c orange juice
6 plain matzo
8 eggs
tsp salt
1 tsp ground cinnamon
1 1/2 c sugar
1/2 c butter, melted

Directions:
Directions:
ºPreheat oven to 350º,

Toss apples with brown sugar and orange juice, set aside in medium bowl.

Break matzo into small pieces and soak in 1 c warm water until soft but not mushy. Drain and set aside

Beat eggs with salt, sugar, cinnamon and melted butter.

Drain liquid from matzoth and add to the egg mixture. Stir in apple mixture.

Put into a 2 1/2 c casserole or 9 x 13 inch pan.

Bake for 1 hour. Cover top with foil if the top begins to brown to early.

Can be made 2 days ahead, cooled, and chilled.

Bring to room temperature and reheat in a 350 degree oven
