Ingredients: 2 cans diced tomatoes 1 box Ritz crackers (crush the crackers in their original sleeves) 2 medium onions 1 1/2 cups extra sharp cheddar 1 cup grated Parmesan 2 cups mayonnaise 3 T. chopped fresh basil 1/3 cup olive oil 1/4 tsp salt 1/4 tsp ground pepper

Directions:Butter a 13X9 baking dish. Spread two sleeves of the crushed Ritz crackers and layer into bottom of dish. Pour 1 can on tomatoes (including juice) over the crackers. Saute onions in olive oil, salt & pepper until tender. Layer 1/2 of the onions onto the tomatoes. Add a layer of 1 sleeve of crushed crackers. Pour the second can of tomatoes over. Now add the other half of the onions. In a separate bowl, combine mayo, cheeses and basil. Mix well and spread over the last tomato/onion layer. Top with the last sleeve of crushed crackers. Bake at 350º for 30-40 minutes until golden brown. |

Notes: There is a great little southern place in Atlanta, Georgia called Mary Macs Tea room. I bought their cookbook but this recipe was not in it. I wrote to them and they mailed it to me!!!! Anyways, I ate there several times when I was in Georgia, and got the southern hospitality!
