1 tbsp. cornstarch
3 tbsp. sugar
Pinch salt
1 tsp. lemon juice
½ cup water
3 egg whites (room temperature)
3 tbsp. sugar

Directions:
Directions:
In a saucepan, combine cornstarch, 3 tbsp sugar, salt, lemon juice and water. Cook and stir over medium heat until clear and thickened. Set aside to cool. (make sure this is completely cool before adding to egg whites.

In a large bowl, beat egg whites until soft peaks form. Gradually add cooled cornstarch mixture, beating until mixture thickens. Gradually add 3 tbs. sugar beating until soft peaks form, 5-8 minutes.

With a spoon, arrange meringue around the perimeter of prepared lemon pie, touching but not covering the crust’s edge, then filling the center. Bake for 15–25 minutes until golden brown. Let cool 1-2 hours before serving.
