1 lb. bacon, diced
1 med. Sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash browns (thawed)
2 cups (8 oz.) shredded cheddar cheese
1 ½ cups (12 oz.) small- curd cottage cheese
1 ¼ cup shredded Swiss cheese

Directions:
Directions:
In a large skillet, cook bacon & onion until bacon is crisp;
Drain. In a bowl, combine the remaining ingredients; stir in
Bacon mixture. Transfer to a greased (may use pam spray)
13 x 9 baking dish.

Bake uncovered at 350 degrees for 35-40 min. or until set and bubbly
(I covered with aluminum foil for the first 25 min. & then finished the baking
Time uncovered) Let stand for 10 min. before cutting.*Can use sausage or cubed ham or a combo of all 3 meats for added variety. I used pre-cooked bacon and put it in the microwave to crisp it up.
