Famous Barr's French Onion Soup Recipe

1 lb. 6 ounces peeled onions
3 ounces butter
1 tsp. pepper
1 tbls. paprika
2 bay leaves
1 1/2 tsp. salt
1/2 cup all-purpose flour
1 1/2 quarts beef bouillon (from cubes or canned)

Directions:
Directions:
Cut onions in half and slice with the grain about 1/8 inch thick. Melt butter and add sliced onions. Saute slowly for 20 minutes, stirring frequently.
Add paprika, pepper, bay leaves and flour. Mix well, keeping flame low. Stir while cooking for 5 minutes.
Gradually add hot bouillon while stirring. Simmer soup, covered, for at least 30 minutes.
If a rich brown color is desired, add caramel coloring. Taste soup and season with salt.
Serving suggestion: Heat soup and fill oven-proof casserole or individual crocks with soup. Top with thin slices of toasted French bread and cover with grated Swiss or Gruyere cheese. Place under broiler and melt cheese until golden brown. Yield: 2 quarts

We (Grandma, Aunt Judi and me) use to love to go to Famous Barr downtown and I think we also went to Southtown (corner of Gravois and Kingshighway) to their tearoom for this soup.
