¼ cup butter or margarine
½ cup chopped green bell pepper
½ cup chopped yellow onion
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
1 can Rotel Original Diced Tomatoes
2 cups cooked chicken breast
12 corn tortillas, torn into bite sized pieces
2 cups shredded cheddar cheese

Preheat oven to 325º. Spray a 13x9 baking dish with cooking spray.

Melt butter in a large saucepan over medium heat. Add bell pepper and onion; cook and stir about 5 minutes or until tender. Stir in both soups, undrained tomatoes, and chicken.

Layer one-third of the tortillas, chicken mixture, and cheese in the baking dish. Repeat layers two more times.

Bake uncovered 40 minutes or until hot and bubbly.
