1/2 stick butter
1 cup brown sugar
1/2 tsp. cinnamon
1/4 cup Rum
2-3 bananas, cut lengthwise and halved

Directions:
Directions:
Melt butter in skillet and add brown sugar and cinnamon. Cook on low heat stirring until sugar is melted. Add banana slices and cook until they are tender. Add rum and stir, then tip the pan slightly and light the liquid...when the flames subside the sauce is ready to serve over vanilla ice cream.

In the 1950's, New Orleans was the major port for bananas shipped from Central & South America. Mr. Brennan asked his chef to make something new with bananas, so the chef created Bananas Foster, named for a very good friend and frequent customer of Brennan's. It became the most popular dessert on the menu.
