Crown Roast of Pork (6-8 bones), 9 lbs or porkloin roast
6-8 fresh rosemary sprigs
1 pkg prochutto
4 shallots
salt and pepper, garlic
1-2 c white wine (cranberry wine nice at Xmas or thanksgiving)

1 c white wine to sip on while preparing!!!

Directions:
Cut prochutto into 1" strips, place some rosemary and slice of shallot, roll
Make about 20 rolls.

Cut slits all over the roast, top, bottom, sides
stuff the prochutto rolls into the slits
Place roast in roasting pan
Add spices, salt, pepper, garlic, rosemary springs
Add wine
Bake 350 - 3 hrs or until tender - add more wine if needed

Alternate: can barbecue by placing roast on thick tin foil. Use few sheets to ensure liquid will stay in. Barbecue on medium for 2-3 hours.
