1/2 c. crème fraîche or sour cream*
1/2 c. chopped fresh Italian parsley
1/4 c. chopped fresh chives
1/4 c. chopped green onions
2 Tbs. fresh lemon juice
1 Tbs. white wine vinegar
5 anchovy fillets, chopped
1 c. mayonnaise
1/4 tsp. salt
Cayenne pepper, to taste

Puree first 7 ingredients in blender or pulse in food processor until only tiny flecks of herbs remain. Transfer to medium bowl. Add mayonnaise; whisk to blend well. Mix in salt. Season dressing to taste with cayenne pepper. Cover and refrigerate at least 1 hour.

Dressing can be made 2 days ahead. Keep refrigerated.

*Note: For a thicker consistency 1/4 c. cream cheese, softened can be substituted for 1/4 c. of the sour cream.
