8 cups water
2 cups split peas
2 lb. ham hocks
4-6 potatoes cooked and cubed
1 1/2 smoked sausage links
3 celery stalks, chopped
4 leeks
1 large onion, sliced
1 tsp. thyme
1 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Soak split peas in water overnight. Rinse and add fresh water and peas and boil for 1 hour. Add remaining ingredients except the sausages. Bring to boil and simmer until it is smooth and thick, about 3 hours, adding the sausage the last 15 minutes.

The longer the soups simmers the better the taste. The next day the soup tastes even better.
