2 c seedless raisins
1 c currents
1 1/2 c seeded raisins
1 1/2 c red and green cherries
1 c chopped dates
1 1/2 c mixed peel
1/2 c candied pineapple
2 2/3 c flour
1 1/2 tsp baking powder
3/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/4 tsp mace
1/4 tsp ground cloves
1 c butter
1 1/4 c brown sugar
6 eggs
1/4 c molasses
1/3 c cold strong coffee

Directions:

1. Cream butter and sugar.
2. Add eggs one at a time and beat well after each one.
3. Stir in molasses and coffee.
4. Mix dry ingredients and save approximately 2/3 c of flour mixture to coat the fruit to prevent it from sinking to the bottom.
5. Mix all fruit together and toss with the reserved flour. Add floured fruit to batter and mix well.
6. Grease and flour 2 loaf pans or a bundt pan or spring form pan.
7. Bake at 300ºF for 2 3/4 - 3 hours.
8. Put a pan of water in with the cake in the oven.
*Once cooled wrap well and store until Christmas.

This Christmas fruit cake has been passed down in our family for about 3 generations. It is easy to make and is really delicious. Mom, June had to make both a light and dark fruit cake every Christmas as us kids could never decide which one we liked the best .
