8 tablespoons butter
1/2 pound mushrooms, sliced
3 tablespoons flour
2 cups heavy cream
1/4 cup dry sherry
4 cups cooked lobster meat
Salt
1 cup fresh Parmesan cheese, grated
2 cups of rice

Directions:
Directions:
1. Preheat the oven 450ºF
2. Butter a shallow baking dish.
3.Melt 5 tablespoons of the butter in a saucepan.
4.Add the mushrooms and cook until they are softened. Remove and set aside.
5. Melt the remaining 3 tablespoons of butter, stir in the flour, and cook until smooth and thickened. Add the sherry and cook 1 minute more.
6. Remove from the heat and add the lobster and salt to taste.
7. Spoon into the baking dish, sprinkle with cheese, and bake about 10 minutes, until the cheese is melted and lightly browned.
8. Serve over rice.
