4 eggs
¼ c. honey
¾ tsp. salt
2½ c. milk
1 c. flour
4 T. butter
Honey for topping
Fruit for topping (optional)

Directions:
Preheat oven to 425°. Put a 10 inch, oven-proof, heavy skillet in the oven for about 10 minutes. Meanwhile, in a blender, combine eggs, honey, salt, and milk. Add flour. Mix until well blended and frothy. Put butter in hot pan and let melt without turning brown. Pour batter into hot pan. Bake for at least 35 minutes, or until well browned. It is done when it does not jiggle (very important). Serve after it has "fallen" by cutting into wedges and top with honey and fruit (if desired).
