1 Stick butter - melted
1 cup sugar
2 eggs
1 teaspoon vanilla
1 c. flour
1 tsp. baking powder
pinch of salt


1 pint of rinsed blueberries or 12 ounce frozen
few squeezes of lemon juice
1 tsp. sugar
1½ tsp. cinnamon

Directions:

Combine first 7 ingredients and mix throughly.

Combine next four ingredients in a separate bowl.

Grease sides and bottom of a springform pan.

Pour mixture into pan.

Spoon blueberries on top of mixture

Bake at 350º for 1 hour.

Remove from oven and let cool for approx. 15 minutes before removing from pan. When you remove from oven, gently run a knife around the outside of cake to make sure that it doesn't stick to the sides of the pan.

You can use any fruit you like. I used 2 1/2 cups of cut up peaches.
