1 head of romaine or big bag leaf lettuce torn into bit size pieces
1/2 lb back cut in 1/2 in pieces
1 onion finely chopped
1/4 c water
1/4 c finegar
3 TBLE spoons sugar or to taste
salt & pepper to taste

Directions:
Directions:
Place lettuce into heat proof bowl.

Fry bacon until half cooked.

Add onion and continue to fry until bacon is crisp but not burned

Remove Onion & Bacon - drain on paper towel

Pour bacon grease into measuring cup

Add water, vinegar & sugar. Bring to a boil till sugar is dissolved.

Add up to a 1/2 c bacon grease back in.

Pour hot vinaigrette over lettuce.

Add salt & pepper to taste. Toss salad to coat dressing with lettuce.

Serve immediately.
