4 Boneless Skinless Chicken Breasts
1 package sliced fresh mushrooms (about 10 ounces)
¾ cup chicken broth
¼ cup red wine
3 tablespoons Dijon Mustard
1 can Italian Chopped Tomatoes
1 can artichoke hearts
2 teaspoons corn starch

Directions:
Directions:
Season chicken with salt and pepper and cut into pieces. Heat 1 tablespoon oil in large skillet and cook over medium heat until browned on all sides.

Use same oil (may need to add a little more) and add mushrooms. Cook until tender. Add, broth, wine and mustard. Return chicken to skillet. Add tomatoes and artichokes. Heat to boiling, then turn to medium-low. Cook, covered, for about 10 minutes until chicken is done.

Combine cornstarch with 1 tablespoon cold water in a small bowl. Stir into skillet, heat to boiling. Cook until sauce thickens.

Serve with your favorite rice or orzo pasta.
