2 lbs. crawfish tails
60 cleaned crawfish heads
seasoning blend
2 tbsp. minced garlic
3 eggs beaten
2 cup Italian bread crumbs
seasoning

Directions:
Directions:
Preheat oven to 350º. Grind crawfish tails, seasoning blend and garlic in food processor. Once ground add eggs and bread crumbs to hold together. Season to taste. Stuff equal amounts into crawfish heads. Bake 20 minutes or until lightly browned set aside
 

Sauce


Ingredients:  
Ingredients:  
1 lb. crawfish tails
1½ cup vegetable oil
1½ cup flour
2 tbsp. minced garlic
¼ cup tomato sauce
3 quarts crawfish stock
1 cup chopped green onion

Directions:
Directions:
Make roux. Add seasoning blend and garlic sauté until wilted 3-5 minutes. Add crawfish tails and tomato sauce. Slowly add crawfish stock. Bring to rolling boil, reduce to simmer and add stuffed crawfish heads. Simmer 45 minutes, stirring occasionally. Add green onions and seasoning
