½ cup butter
2 cups onions, chopped
½ cup bell pepper, chopped
1 cup celery, chopped
2 tbsp. parsley, chopped
1 tsp. salt
½ tsp. cayenne pepper
¼ tsp. tabasco
1 lb. crawfish tails
2 cups raw rice, cooked
4 or 5 bell peppers, cut in half

Directions:
Directions:
Sauté butter, onions, celery, bell pepper and parsley. Add crawfish and seasonings. Cook on low about 15 minutes, stirring occasionally. Then stir in rice and remove from heat. Spoon crawfish mixture into bell pepper halves. Bake in 9x13 pan at 375º for 20 minutes.
