1/4 cup coconut oil or melted butter. Use some for greasing the pan.
1 cup ripe bananas (I peel two ripe bananas and put in freezer bags and freeze to bake banana bread at a later date.)
1/2 tsp. baking soda
3 T. brown sugar (I use 3 T. of Local Honey instead)
1 large egg
1/2 cup whole wheat flour
1/2 cup oatmeal (I spin in the bullet to make oatmeal flour)
1 tsp. vanilla
1/2 tsp sea salt
1 tsp. cinnamon.opt.
1/2 cup of nuts, opt.

Preheat oven to 350 degrees.
Grease loaf pan, or I use a mini loaf pan
In a large bowl, mash the bananas.
Add baking soda.
Add remaining ingredients.
Mix well and spread in prepared pan.
Bake 30 minutes until edges are brown and center is firm.(20 minutes if using the mini pans.
Cut into 6 bars.

These bars are worth 1 carb each. Try mixing a little cream cheese with honey and topping the bars. Enjoy this healthy treat. Pair with a couple scrambled eggs and you have a great breakfast. Dave likes his banana bar topped with cottage cheese.
