Pineapple Muffins Recipe

2 C flour
2 3/4 tsp baking powder
1/4 tsp soda
1/2 tsp salt
1/4 C butter, melted
1/4 C sugar
1 egg
3/4 C milk or buttermilk
1/2 C crushed pineapple, drained

Directions:
Directions:
Preheat oven to 400 degrees. Sift dry ingredients into large bowl. Combine egg, milk and butter. Add to dry ingredients along with pineapple. Stir just until moistened. Pour into greased muffin tins. Bake for 12-15 minutes.

These baked muffins can be frozen. Bring to room temperature one hour before warming in a 325 degree oven for 10 minutes.

These muffins were always made at Thanksgiving, Easter and Christmas. Serve hot with softened butter or cream cheese
