6 - Large Onions
2 Each - Green, Red and Yellow Bell Peppers
6 - Jalapeņo Peppers
20 - Plum Tomatos
6 - Garlic Cloves
1/2 Bunch of Cilantro
1 Tbs. Cumin
Salt & Pepper to Taste
3/4 Cups - Extra Virgin Olive Oil

Prepare Smoker with Hickory, Apple or your favorite wood or pellets to smoke vegetables.
1. Clean and dry the vegetables
2. Lightly oil the vegetables, and place on sheet pan in the smoker
3. Smoke vegetables until soft
4. Let vegetables cool for 20 minutes
5. Use plastic wrap to sheet pan with vegetables and place in cooler
6. once the vegetables have cooled, chop them into small pieces and mix together with cilantro and seasonings.
