1 lb Camellia Red Kidney Beans
1 lb Smoked Sausage, sliced
1/2 cup of Green Bell Pepper, chopped
2 tbsp Onion Powder
1/2 cup Celery, chopped
1 close of Garlic, chopped
1/4 stick of Butter (optional)
8-10 cups Water
1 large Bay Leaf
2 tbsp Parsley, chopped
1 tsp Black Pepper
1 tsp Salt
2 tsp Two-Step
1/4 tsp Tumeric
1 tsp Celery Tops

Directions:
Directions:
Rinse and sort beans. In a large heavy pot, cook sausage for 5 minutes. Add vegetables and garlic to sausage, along with butter, and continue to cook until onions turn soft and clear. Add beans, water and bay leaf. Bring to a boil for 10 minutes. Reduce heat, cover and simmer for 1 to 1 1/2 hours, stirring occasionally, until beans are desired tenderness. Add parsley, salt, pepper, and Cajun seasoning. Add more water while cooking, if necessary. For creamier consistency, press some beans into the side of the pot with a spoon and stir. Serve over hot cooked rice.
