4 boneless chicken breast halves
1/3 c. corn starch
1 tsp. ground cumin
1 tsp. garlic powder
1 tsp. salt
1/8 tsp. cayenne pepper
1 egg
2 Tbsp. water
1/2 c. cornmeal
1/4 c. vegetable oil
1 medium. avocado, thinly sliced
2 c. shredded Monterrey Jack cheese
Sour cream, salsa and sliced green onions, optional

Directions:

Pound chicken into to 1/4 inch thickness, set aside.
In a shallow bowl, combine cornstarch, cumin, garlic powder, salt & cayenne.
In another bowl beat egg & water.Dip chicken into egg, then cornstarch mixture; coat with cornmeal.
In another bowl large skillet, brown chicken into egg oil until golden brown on all sides. Place in a greased 13x9 baking dish; arrange avocado evenly on top. Bake uncovered, at 350 for 10-15 minutes or until juices run clear. Sprinkle with cheese. Serve with sour cream, salsa & green onions if desired.
