¾ lb cooked chicken, shredded
¾ lb medium shrimp (peeled and de-veined)
¾ lb smoked sausage, sliced
salt and cayenne pepper to taste
2 tbs oil
1 large onion, chopped
2 stalks of celery, chopped
1 medium bell pepper, chopped
2 cups of uncooked rice
4 cups of water
½ cup of chopped green onions
½ cup of chopped parsley

Directions:
Directions:
1.Dust shrimp with a pinch of cayenne pepper. Saute shrimp in oil, in a large heavy skillet for 1-2 minutes until cooked. Remove and set aside.
2. Brown sausage in skillet until well cooked
3. Add onion, celery and bell pepper. Cook until onion is transparent
4. Add rice and water along with seasonings Cover and cook over low heat, stirring frequently. If rice doesn't appear to be cooking, add water in small amounts until cooked)
5. Add chicken and shrimp just prior to serving along with the green onions and parsley
