6 Bell peppers or Tomatoes
1lb of ground beef
1 can of roasted tomatoes
Feta cheese
Rice
1 can of chickpeas
Salt and pepper
Cumin
Garlic powder
Greek seasoning
Soup sized pot
Smaller pot for rice

Directions:
Directions:
1. Wash the veggies then Cut the tops of the bell peppers remove seeds, if you use tomatoes take a spoon and carve out the insides of the tomatoes- Let dry. -Turn oven on to 425F
2. Cook ground beef, (In a pot that you would make soup) after mostly cooked: Sprinkle salt, pepper, garlic powder, Greek seasoning, and teaspoon of cumin add a little more if it doesn't taste just right.
3. Make your rice- Let the rice come to a boil 10 minutes medium-high heat, closed 5 minutes medium-low heat, closed 5 minutes off heat and keep closed to steam
4. Once finished with the meat add your roasted tomatoes (I don't drain them), then chickpeas (I do drain them). Get to a simmer then put the heat on low.
5. Combine the two into the larger pot add a healthy amount of parsley and mix it all together.
6. Line up your empty veggies on an oven trey, get a spoon and scoop the mixture into the Bell pepper or Tomato and sprinkle feta cheese on top.
7. Slide trey into oven for about 30-40 mins. (If you use other cheeses, ex: mozzarella it'll burn faster and the veggies won't soften like they should, sprinkle other cheeses on towards the last 10 mins or so.)
8. Let sit for a few minutes and Bon appetite!
