Ingredients: • 8 oz of cream cheese • 4 tbs unsalted butter • 2 (14 oz) cans shoepeg corn or whole kernel sweet corn (not cream-style) • 1 (4.5 oz) can hot or mild chopped green chilies • 3 – 4 fresh jalapenos, finely diced • Salt and ground black pepper

Directions:Heat oven to 325 degrees. While oven is heating place cream cheese and butter in a 9 x 13’’ baking dish. Place in the oven to melt.
When cream cheese has fully softened, remove the dish from the oven. Stir to combine butter and cream cheese. Next stir in corn, green chilies and jalepenos. Season to taste with salt and pepper. Return the dish to the oven and bake until bubbly, 30 to 35 minutes.
Switch the oven to broil and continue to bake until the top of the corn is slightly browned, about 5 minutes. Let cool for 5 minutes before serving. |

This is a family favorite at holidays in our house. It’s a rich “veggie” dish which makes us feel a little better about it. Its highly variable, more veggies (bell pepper is good) or more hot peppers are always a hit. Just don’t let your spouse or “good friend” add too many hot peppers. My spouse has made it too hot to eat before. He ate the whole pan by himself over 3 days.
