2 cups plain greek yogurt
1/2 English cucumber
1 tbsp lemon juice
1 tbsp fresh dill, chopped
1 1/2 tsp dried oregano
2 cloves garlic, minced
1 tbsp olive oil

Directions:
Directions:
Slice cucumber in half lengthwise, scoop seeds out with a spoon and discard seeds. Grate cucumber with cheese grater into a bowl lined with paper towel. Press cucumber to release as much liquid as possible. set aside.

In a medium bowl, combine yogurt, juice, dill, oregano, garlic and cucumber. Drizzle with olive oil, additional dill and a sprinkle of salt. Ready to serve.

We like to eat it with pita or naan bread. If you brush the naan with garlic infused oil and warm in skillet, than sprinkle with some fresh parsley it makes it extra special!
